 Jalapeño Pepper


Well-known and moderately spiced, Jalapeño peppers are dark green in color with a green stem, firm, smooth skin, and range from 3 to 5 inches long. Some may have dry, brown cracks on their skin, which is not a sign of decay, but actually growth cracks which indicate “hotness.”

They can be served raw in salsas and other dips, or cooked in soups and stews. The use varies widely, but most often they are used with the seeds and inner membrane removed.
