Wax Beans

Similar to green beans except for their vibrant yellow color.  Wax beans should be similar in size to snap beans, approximately 5 to 7 inches long.  Pods should also be harvested when they are firm, crisp and fully elongated but before the seed has developed significantly. 

Wax beans also have a similar flavor to snap beans, and can be served in the same way.  They add a surprising amount of color to any dish.  Try mixing carrots, snap beans and wax beans together for a colorful vegetable side dish sure to liven up any entrée.
